The food industry is entering a period of structural change.

Three forces are changing what people eat

According to the report, three powerful forces from outside the traditional food industry are accelerating this transformation.

The first is the rapid adoption of appetite-suppressing medicines, particularly GLP-1 drugs. These treatments are changing appetite, portion size, food preference, and consumer expectations. They also reinforce an important scientific reality: obesity is not simply a failure of discipline or willpower. Appetite and energy regulation emerge from an interconnected biological system involving the gut, brain, hormones, metabolism, and reward circuitry.

The second force is artificial intelligence. Consumers are overwhelmed by conflicting nutritional advice from health professionals, traditional media, social platforms, influencers, podcasts, and commercial marketing. AI is rapidly becoming a new interpretive layer—helping people plan meals, evaluate products, compare alternatives, and eventually purchase food on their behalf.

But this influence brings considerable responsibility. Nutrition guidance must be scientifically credible, transparent, culturally appropriate, and protected from commercial manipulation. The system that recommends the food may ultimately become as influential as the company that makes it.

2. Food that genuinely nourishes

One of the report’s strongest observations is that healthier food cannot be defined only by removing undesirable nutrients.

Reducing sugar, salt, or certain additives may be valuable, but absence is not the same as nourishment. The emerging opportunity is food that provides greater nutritional and metabolic value per bite.

Bramble highlights four areas:

  • Micronutrients delivered in natural, bioavailable forms

4. Closing the loop between diet and health

The fourth shift is the creation of a continuous feedback loop connecting food purchases, dietary behaviour, biomarkers, wearables, and health outcomes.

In the traditional model, consumers receive general dietary advice and are expected to follow it without seeing an immediate result. In the emerging model, coaching and diagnostics can show whether a change is working, reinforce beneficial behaviour, and help refine future decisions.
